This is from Seat Of The Pants as well.
12 oz. rotini or some other easy to eat pasta
3-4 cups coarsely chopped fresh broccoli
3 cloves garlic pressed or 2 tsp. minced
3 Tbs. olive oil
2 tsp. dried basil or 2 Tbs. chopped fresh basil
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup pine nuts or walnuts (optional...but I must have them in this dish...one or the other)
Parmesan or romano cheese for toppingCut up and steam broccoli, boil pasta. When broccoli is done refresh under cold water.
Meanwhile, heat olive oil in a skillet. Saute garlic briefly. Add broccoli, basil, salt, pepper, and pine nuts (walnuts). Saute 3-4 minutes.
Drain cooked pasta and toss with broccoli mixture. Serve topped with parmesan or romano cheese.
This looks great -- can't wait to try it! By the way, I think you were looking for a good (child-friendly) chili recipe a while ago. Desperation Dinners has a good turkey chili recipe. I sub out the chopped carrots for canned corn. (I got DD because of your blog -- thanks for the tip!)

Yum! I don't usually like broccoli, but this sounds good anyway and my family LOVES broccoli. And I could always sub spinach, which we all like. I need to eat more pine nuts, anyway, since they are divine.
