Did They Eat It: Slow Cooker Turkey Breast

It was finally over 35 degrees and sunny outside meaning everyone in Michigan donned bathing suits and took to the streets. It was so downright balmy. So for dinner I decided to make something spring-ish and light! Turkey and Dressing Slow Cooker Casserole.
Yeah, not the light spring-ish dish I was looking for but I made the menu when it appeared the sun would never reappear in this hemisphere and I needed some delicious warm comfort food to get through.

To start, spray your crock pot dish with spray vegetable oil.

Then dump in an 8 ounce package of stuffing mix.

Drop in 2 Tbsp of butter

And 1/2 cup water (note I apparently can't see with my eyes because that's not a full 1/2 cup).

Dump in 1/4 cup dried cranberries. (they were supposed to be diced but I didn't read that until just now)

And a chopped onion.

Plus a 1/2 cup chopped celery. (then mix it all up)

Sprinkle a 3 pound boneless turkey breast with salt, pepper and a tsp of dried basil.

Put the cover on and cook on low for 6-7 hours. Voila turkey and dog food/stuffing right to your plate.

Did They Eat It?
Logan: Really good, I like how you didn't screw up the turkey by doing a bunch of weird things to it. Also it's on the table at 5:30. Impressive.
Max: The stuffing is like dog food, you're not kidding. I don't understand why anyone would put this in their mouth and swallow it. But the turkey is moist and good.
Maddie: I liked turkey at Thanksgiving but I guess I'm just a once a year turkey fan.
Melissa: It was good and super simple. I liked the stuffing but then I guess I'm so not picky I may very well eat dog food too.
Here's the whole recipe:
Slow Cooker Turkey & Dressing
8 oz pkg. stuffing mix
1/2 cup hot water
2T Butter, softened
1 onion chopped
1/2 cup chopped celery
1/4 c sweetened diced cranberries (oops I didn't chop mine!)
3 lb boneless turkey breast
1/4 t. dried basil
1/2 t. salt
1/2 t. pepper
Coat a 4 quart slow cooker with non stick spray; Spoon in dry stuffing mix. Add water, butter, onion, celery and cranberries. Mix well.
Sprinkle turkey with salt, pepper and basil and place over stuffing mix. Cook on low, covered, for 6-7 hours on low.
Remove turkey, slice and set aside. Gently stir up the stuffing and allow it to sit for 5 minutes.
I need some clarification: did the stuffing taste like dog food, or did it just look like dog food?
In all sincerity, this looks like a yummy dinner, and it might be something my 3-year-old would eat. He has gone from eating anything I put in front of him with gusto to only wanted buttered noodles and vanilla yogurt.

thanks so much for all the slow cooker recipes, you are saving my life! I wonder if it would help if you took the stuffing out & baked it for a few minutes, to get it crunchy on top? Oh, and my 1 year old will only eat grilled cheese, I fear for the future....

The stuffing didn't taste like dog food to me. I can see how an 8 yr old thought it looked like dog food though...

I sometimes throw in a frozen turkey breast, cover w/cajun seasoning and let cook 6-7 hours on low. I usually rinse off good but don't add any extra liquid. When it's done, cut up or shred and make sandwiches (like bbq).

Oh, and see the mixed veggies on the plate there? Maddie ate ONLY THE PEAS AND CORN, and ONLY ONE PEA OR ONE KERNEL OF CORN AT A TIME. I was as food-picky a child as children come, now I'm paying the piper.

I was so excited about trying this recipe. It seemed simple, I never cook or eat turkey except at Thanksgiving and it just looked scrumptious! I went to the grocery store last night and all I could find were 14lb. turkeys and a turkey roast (had white and dark meat). I have never heard of a turkey roast so I was scared to try it. I was so frustrated I asked someone in the meat department. He said they only carry the small size turkeys around holidays:( I noticed some larger turkeys out in the center so I am hoping they will bring out some small turkey breast for Easter.

I made this last night.
I added pecans to the stuffing and eliminated the celery.
It turned out ok but next time I will just do the turkey in the cooker and the stuffing on the stove. I didn't love the stuffing from the slow cooker.
